On of the Languedoc39s highest altitude sites, Domaine l39Aigle sits at 450m above sea level. The cool temperatures here afford the grapes up to an extra month on the vine than in low lying areas, developing ripeness while maintaining acidity for wines with great finesse. Oak fermented and aged on its lees, this wine closely resembles quality oaked white Burgundy from the Cocircte d39Or. White fruit and lemon flavours, nuanced with hints of flowers, hazelnut and almond. Serve lightly chilled with fish, roasted poultry, or soft goat39s and sheep39s cheeses.
