The grapes for this wine are grown in Chacircteau des Maladrets39 sandy and granite rich soils, on low yielding old vines, are hand harvested before undergoing 39semi carbonic maceration39 and intracellular fermentation in large open topped wooden vats. This is a vibrant ruby coloured wine with a lifted perfumed nose of kirsch and sweet spice, hints of white pepper, an elegant balance of acidity and fruit, minimal tannins and a long sweet spice finish. At its best when served lightly chilled and drunk within the next three years, especially with pork and poultry or grilled fish.
